  • 12 tablespoons peanut oil (can sub olive oil)
  • 3 cups broccoli florets (washed and patted dry)
  • 3/4 cup chicken broth
  • 2 tablespoons cornstarch
  • 1/4 cup soy sauce
  • 3 tablespoons mirin
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey
  • 1 ½ tablespoons brown sugar
  • 1 teaspoon hot sauce
  • ½ teaspoon ground ginger
  • ¼ teaspoon toasted sesame oil
  • 3 cloves garlic (minced)
  • Green onions
  • Toasted sesame seeds
  • Red pepper flakes
  • 3 cups cooked rice

Instructions

  1. Prepare the teriyaki sauce by mixing chicken broth with cornstarch and remaining ingredients.
  2. Cut chicken into cubes, season with salt and pepper.
  3. Heat peanut oil in a skillet over medium-high heat, then add chicken and broccoli; cook until golden brown.
  4. Add the sauce to the skillet, bring to a boil, then reduce heat to thicken.
  5. Return chicken and broccoli to the skillet; heat through for one minute.
  6. Serve garnished with green onions and sesame seeds.
