  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 teaspoon salt
  • teaspoon black pepper
  • 1 teaspoon paprika
  • teaspoon onion powder (optional)
  • cup chicken broth or water

Instructions

  1. Preheat your oven to 375F (190C). Pat the pork loin dry with paper towels.
  2. In a small bowl, mix olive oil, Dijon mustard, minced garlic, rosemary, thyme, salt, black pepper, paprika, and onion powder.
  3. Rub the mixture evenly over the pork loin.
  4. Heat an oven-safe skillet over medium-high heat; sear the pork on all sides until golden brown.
