  • 4 boneless, skinless chicken thighs
  • 1 cup sweet corn kernels
  • 1/4 cup sliced red onion
  • 1/2 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 3 cups prepared rice
  • Fresh cilantro leaves
  • Lime wedges

Instructions

  1. In a skillet over medium-high heat, add avocado oil and season chicken thighs with lime juice, chili powder, cumin, garlic powder, salt, and pepper. Cook for 6-7 minutes on each side until golden brown.
  2. While the chicken cooks, mix sweet corn with red onion, sour cream (reserve some), mayonnaise, cotija cheese, chili powder, salt, and lime juice in a bowl.
  3. Once cooked, slice the chicken into strips. In serving bowls, layer rice at the bottom followed by sliced chicken and corn mixture.
  4. Garnish with fresh cilantro leaves and lime wedges before serving.
