  • 600 grams of cod fillets
  • Salt and black pepper
  • 2 tablespoons of olive oil
  • 1 medium onion, thinly sliced
  • 1 tablespoon grated fresh ginger
  • 2 crushed garlic cloves
  • 300 milliliters of coconut milk
  • Juice and zest from 1 large organic lemon

Instructions

  1. Preheat the oven to 180C (350F).
  2. Season cod fillets with salt and pepper.
