  • 2 cups fresh apple cider
  • 2 cups chicken broth
  • 2 tbsp Dijon mustard
  • Fresh rosemary and thyme sprigs
  • 1 red onion
  • 2 firm apples

Instructions

  1. Preheat your oven to 300F (150C).
  2. Season the pork shoulder with salt and pepper.
  3. In a Dutch oven, heat oil over medium-high heat and sear the pork until golden brown on all sides.
  4. Remove the pork and saut sliced red onion for 3-4 minutes; add garlic.
  5. Deglaze with apple cider, then return the pork to the pot with chicken broth, mustard, herbs, and apple wedges.
  6. Cover and braise in the oven for approximately 3 hours until tender.
  7. Let rest briefly before serving.
