  • 250g tagliatelle (or fettuccine)
  • 1 tbsp olive oil
  • 56 fresh basil leaves
  • 2 cloves garlic (minced)
  • 100g pancetta (cubed)
  • 500ml Italian Passata (or crushed tomatoes)
  • 125g fresh mozzarella
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot. Add salt and tagliatelle; cook until al dente (7-10 minutes).
  2. In a large pan, heat olive oil over medium heat. Cook pancetta until crispy, then add garlic and optional chili flakes.
  3. Stir in half the basil and Passata; simmer.
  4. Drain pasta and combine it with the sauce in the pan, adding remaining basil.
  5. Tear mozzarella into pieces and stir until slightly melted.
  6. Serve immediately with grated Parmesan on top.
