  • 1/2 cup Onion (chopped)
  • ½ tablespoon Garlic (minced)
  • 2 cups Red Bell Pepper (diced)
  • 2 tablespoons Taco Seasoning
  • 3 cups Medium Shells Pasta
  • 1 tablespoon Tomato Paste
  • 2 cups Beef Broth
  • 2 cups Water
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. Spray a large pan with olive oil and heat over medium-high for about 3 minutes.
  2. Add ground beef, onion, garlic, and bell pepper; cook until beef is browned and vegetables are tender (about 10 minutes).
  3. Stir in uncooked pasta, taco seasoning, tomato paste, beef broth, and water. Cover and bring to a boil (around 5 minutes).
  4. Remove cover, reduce heat to medium, and simmer for 10-12 minutes until pasta is cooked and liquid is mostly reduced.
  5. Off heat, mix in shredded cheese until melted and creamy.
