  • 1 pound chicken thighs
  • 2 small sweet potatoes (10 ounces), diced
  • 1 pound Brussels sprouts, trimmed and halved
  • 2/3 cup sprouted brown rice (uncooked)
  • 1 large apple (175 grams), diced
  • 1/2 cup pecans
  • 1/2 cup goat cheese (2 ounces)
  • 8 cups baby kale (8 ounces)
  • 1 1/2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup balsamic vinegar
  • 2 tablespoons almond butter
  • 12 tablespoons water (or more for thinning it out)

Instructions

  1. Marinate chicken with coconut aminos, garlic powder, ground ginger, red pepper flakes, salt, and pepper for at least 30 minutes.
  2. Roast marinated chicken on a baking sheet lined with parchment paper at 400F for 35-45 minutes.
  3. On another baking sheet, roast diced sweet potatoes and Brussels sprouts tossed in olive oil at the same temperature until tender (about 35-45 minutes).
  4. Cook sprouted brown rice according to package instructions.
  5. Prepare the dressing by blending balsamic vinegar with almond butter and seasonings until smooth.
  6. Assemble the bowls with kale as the base topped with rice, chicken slices, roasted veggies, apple pieces, goat cheese, and pecans. Drizzle with dressing before serving.
