  • 2 pounds sweet potatoes, peeled and sliced
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1 cup shredded Gruyre cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375F (190C).
  2. Boil sweet potato slices in a large pot until tender (about 10-15 minutes). Drain.
  3. Layer half of the sweet potatoes in a greased baking dish.
  4. Sprinkle with half of the cranberries.
  5. In a mixing bowl, combine heavy cream, brown sugar, cinnamon, salt, and pepper. Pour half over the layers.
  6. Repeat layering with remaining sweet potatoes and cranberries; pour over the rest of the cream mixture.
  7. Top with shredded Gruyre cheese and breadcrumbs.
  8. Bake for 30-35 minutes until golden brown and bubbly.
  9. Let cool for a few minutes before serving.
