  • cup softened butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cups all-purpose flour
  • 1 teaspoon baking soda
  • teaspoon salt
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • Topping: cup granulated sugar and 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350F (175C) and grease a 9.25 x 5.25 inch loaf pan.
  2. Cream together softened butter and sugar until fluffy.
  3. Beat in eggs one at a time, then add vanilla and sweet potatoes.
  4. In another bowl, whisk flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually stir dry ingredients into the wet mixture until just combined; pour into the loaf pan.
  6. Mix topping ingredients and sprinkle over the batter. Bake for 5565 minutes until a toothpick comes out clean.
  7. Let cool for 15 minutes before slicing.
