  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 can (8 oz) crushed pineapple in juice, undrained
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, crushed pineapple, garlic, ginger, salt, and pepper. Pour over the chicken.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken; whisk cornstarch and water until smooth. Stir into the slow cooker to thicken the sauce.
  5. Return chicken to the pot and let it cook for an additional 10-15 minutes.
  6. Shred or serve whole over rice or noodles. Garnish with green onions and sesame seeds.
