  • 3/4 cup light coconut milk (divided)
  • 1/2 cup sweet chili sauce (plus extra for dipping)
  • Juice of 1 lime
  • 4 chicken breasts (~2 lbs)
  • 8 cups cauliflower rice (fresh or frozen)
  • 11/2 tablespoons coconut oil
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. In a large Ziplock bag, combine 1/2 cup coconut milk, sweet chili sauce, juice from half the lime, salt, and pepper. Add chicken breasts and marinate in the fridge for 30 minutes to 1 hour.
  2. Preheat your grill to medium-high heat. Grill the marinated chicken for 4-5 minutes on one side, then flip and cook for another 3-4 minutes until fully cooked (internal temperature should reach 165°F). Let rest for 5 minutes before slicing.
  3. In a large skillet over medium-high heat, melt coconut oil. Add cauliflower rice, season with salt and pepper, and sauté until tender (about 5-7 minutes). Stir in remaining coconut milk and lime juice; mix in chopped cilantro.
