  • 2 cups sushi rice
  • 1 pound imitation crab meat
  • cup Kewpie mayo
  • 1 tablespoon Sriracha
  • cup rice vinegar
  • 2 tablespoons soy sauce
  • Toppings: sliced avocado, cucumber, furikake

Instructions

  1. Rinse sushi rice under cold water until clear; cook according to instructions.
  2. Mix rice vinegar, sugar, and salt in a bowl; fold into warm rice.
  3. In a bowl, combine imitation crab, Kewpie mayo, Sriracha, soy sauce, and mirin.
  4. Preheat oven to 350F (175C). Grease baking dish and layer half of the rice followed by half of the filling; repeat.
  5. Bake for 15 minutes until golden and heated through. Top with avocado and cucumber before serving.
