  • 1 1/2 cups crushed digestive biscuits
  • 1/3 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 cups cream cheese, softened
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup sour cream
  • 1 cup fresh peaches, thinly sliced
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350F (175C). In a mixing bowl, combine the crushed biscuits, melted butter, and sugar; press into the bottom of a springform pan. Bake for 10 minutes and let cool.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time followed by vanilla extract and sour cream; mix gently until combined.
  3. Pour filling over the cooled crust and bake for 50 minutes until set around the edges but slightly jiggly in the center. Cool in the oven with the door ajar for about an hour.
  4. Once cool, top with sliced peaches and raspberries. Refrigerate for at least four hours or overnight before serving.
