  • cup celery (chopped)
  • cup onion (chopped)
  • cup carrots (chopped)
  • 1 tbsp fresh thyme
  • 1 tbsp fresh sage
  • tsp salt
  • tsp black pepper
  • 1 tbsp olive oil
  • 2 cups bread flour
  • 2 tsp baking powder
  • tsp baking soda
  • 1 tsp granulated sugar
  • tsp salt
  • 1 cups buttermilk
  • 8 tbsp unsalted butter (melted then cooled divided)
  • 1 tsp fresh rosemary (chopped)

Instructions

  1. Preheat oven to 425F (220C).
  2. In a food processor, finely chop celery, onion, carrots, thyme, sage, salt, and pepper.
  3. Saut the chopped vegetables in olive oil over medium heat for about 10-12 minutes until softened; let cool.
  4. In a bowl, mix flour, baking powder, baking soda, sugar, and salt.
  5. In another bowl, whisk together buttermilk and half the melted butter.
  6. Combine wet ingredients with dry ingredients; fold in cooled vegetable mixture.
  7. Drop spoonfuls of dough onto a baking sheetaround 12 portions.
  8. Bake for 12 minutes; brush with remaining melted butter mixed with rosemary.
  9. Return to oven for an additional 6-8 minutes until golden brown.
