  • 6 bell peppers (2 green, 2 yellow, 2 red)
  • 1 lb lean ground beef
  • 1 cup chopped yellow onion
  • 1 cup white jasmine rice
  • 21 oz salsa (mild, medium or hot)
  • 2 cups beef broth
  • 1 tsp taco seasoning
  • 1 tsp cumin
  • 1 cup shredded Mexican blend cheese

Instructions

  1. Preheat the oven to 375F.
  2. Slice the tops off the bell peppers and scoop out the insides. Rinse and pat dry. Place them in a baking dish and drizzle with olive oil. Bake covered with foil for 25 minutes.
  3. In a large skillet, saut onions until translucent, then add ground beef until browned. Stir in salsa, taco seasoning, and cumin.
  4. Add uncooked rice and beef broth; cover and simmer for about 15 minutes.
  5. Mix in half of the cheese into the filling before stuffing each pepper. Top with remaining cheese.
  6. Bake uncovered for an additional 15-18 minutes until soft.
  7. Serve hot with desired toppings.
