  • 1.5 lbs ground hamburger (80/20)
  • 6 flour taco-sized tortillas
  • 56 ears of corn
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 3/4 cup cilantro leaves
  • Pickled jalapenos
  • Cojita cheese

Instructions

  1. Heat olive oil in a skillet over medium-high heat, then char the corn kernels for 5-7 minutes.
  2. In a bowl, mix charred corn with mayonnaise, garlic, lime juice, scallions, cojita cheese, cilantro, jalapeno, chili powder, Tajin, and salt.
  3. For the creamy jalapeno ranch sauce, combine mayo, sour cream, cilantro leaves, pickled jalapeos with juice, garlic powder, salt, and lime juice.
  4. Preheat a cast iron skillet over medium-high heat; form ground meat into balls and smash them down while cooking for about 3-4 minutes on each side.
  5. Warm tortillas and assemble by placing a burger in each tortilla topped with street corn mixture and drizzle with ranch sauce.
