  • 1 cup sugar

  • 1/2 cup vegetable oil
  • 1 cup diced strawberries (about 1 1/4 cups whole)
  • 1/2 cup smashed strawberries (about 1 cup whole)
  • 2 cups powdered sugar for glaze

Instructions

  1. Preheat your oven to 350°F. Grease an 8 or 9-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, mix the Greek yogurt, sugar, eggs, almond extract, and vegetable oil until well combined.
  4. Gradually add the dry ingredients to the wet mixture until just incorporated.
  5. Gently fold in diced strawberries until evenly distributed in the batter.
  6. Pour the batter into the prepared loaf pan and bake for about 50 minutes or until set.
  7. Allow to cool for approximately 10 minutes before transferring to a cooling rack.
