  • 4 Tbsp butter (room temperature)
  • 2 Tbsp coconut sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/2 cup cassava flour
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup fresh strawberries
  • 1 cup figs
  • 2 Tbsp lemon juice
  • 1 Tbsp honey

Instructions

  1. Preheat your oven to 350F (175C).
  2. Cream together butter and coconut sugar in a bowl until smooth, then add egg and vanilla.
  3. In another bowl, whisk almond flour, cassava flour, baking soda, and sea salt. Fold into the wet mixture until just combined.
  4. Chill the dough while preparing the filling by cooking strawberries and figs with lemon juice and honey until soft. Blend into a jam-like consistency.
  5. Roll out half the dough on parchment paper, add filling, roll up tightly, seal ends, and cut into bars.
  6. Bake on a lined sheet for about 1215 minutes or until golden brown. Let cool before serving.
