  • 1 (15.25 oz) box strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 cups sanding sugar
  • 1 cup unsalted butter (softened)
  • 6 cups powdered sugar
  • Pinch of salt
  • 2 tsp vanilla extract
  • tsp almond extract
  • 1/8 cup heavy cream (plus more if needed)

Instructions

  1. Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
  2. In a stand mixer, combine strawberry cake mix, eggs, and vegetable oil until just mixed.
  3. Scoop dough into 1-inch balls and roll in sanding sugar; place on the baking sheet spaced apart.
  4. Bake for 7-9 minutes until set. Cool completely on a wire rack.
  5. For the almond buttercream, whip softened butter until fluffy, then add salt, vanilla extract, almond extract, heavy cream, and gradually incorporate powdered sugar until smooth.
  6. Assemble cookies by piping buttercream onto half of the cooled cookies and topping with another cookie.
