  • 8 oz rice noodles (or lo mein/udon)
  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 tbsp cornstarch
  • 3 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 2 cups broccoli florets
  • 3 green onions, sliced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar or lime juice
  • 1 tbsp sesame oil

Instructions

  1. Cook the rice noodles according to package instructions; drain and set aside.
  2. Toss the beef with cornstarch. Heat 2 tablespoons of oil in a skillet over high heat; sear the beef for about 23 minutes per side until browned. Remove from skillet.
  3. In the same skillet, add remaining oil; stir-fry bell pepper and broccoli for about 45 minutes until tender-crisp. Add green onions, garlic, and ginger; cook for another minute.
  4. Whisk together soy sauce, hoisin sauce, honey, rice vinegar, and sesame oil in a bowl.
  5. Return the beef to the skillet with vegetables; add cooked noodles and pour sauce over everything. Toss to coat well.
  6. Serve garnished with extra green onions.
