  • 4 chicken breasts
  • 4 ounces cream cheese (softened)
  • cup grated Parmesan cheese
  • 1 cups chopped fresh spinach
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • teaspoon garlic powder
  • teaspoon onion powder
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic (minced)
  • teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 375F.
  2. Drizzle chicken breasts with olive oil and season with paprika, salt, garlic powder, and onion powder.
  3. Cut pockets into each breast carefully.
  4. In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and remaining salt until smooth.
  5. Stuff the mixture into each chicken pocket without overfilling.
