  • 1 ½ lb chicken breast (34 pieces)
  • ½ tsp cracked pepper
  • ½ tsp sea salt
  • 3 garlic cloves, minced (separated)
  • 1 cup ricotta cheese
  • 1 cup fresh chopped spinach
  • ½ cup shredded parmesan cheese
  • 1 tsp Italian seasoning
  • ¼ tsp crushed red pepper
  • 1 ½ cups marinara sauce
  • extra parmesan for topping (about ¼ – ⅓ cup)

Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine ricotta cheese, parmesan, spinach, minced garlic, Italian seasoning, and crushed red pepper; mix until smooth.
  3. Prepare a baking dish by spraying it with oil. Season pounded chicken breasts with salt and pepper on both sides.
  4. Spread the ricotta mixture evenly over each chicken breast. Pour marinara sauce over the top to cover completely.
  5. Bake for 20-25 minutes until the internal temperature reaches 165°F. Add extra parmesan during the last few minutes of baking.
  6. Let rest for 5 minutes before serving.
