  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup green or brown lentils, rinsed
  • 1 can (15 oz) butter beans, drained and rinsed
  • 6 cups vegetable broth
  • 4 cups fresh spinach, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • tsp ground turmeric
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Saut diced onion for 5-7 minutes until soft and translucent; stir occasionally.
  3. Add minced garlic and saut for another minute until fragrant.
  4. Stir in lentils, vegetable broth, cumin, smoked paprika, and turmeric; bring to a boil.
  5. Reduce heat to low and simmer for 20-25 minutes until lentils are tender.
  6. Add butter beans and spinach; simmer for an additional 5 minutes until spinach wilts.
  7. Season with salt and pepper to taste before serving hot.
