Spinach and Feta Quesadillas are a deliciously quick meal that perfectly combines healthy ingredients and flavorful Mediterranean flair. Ideal for lunch, dinner, or a snack, these quesadillas feature fresh spinach and creamy feta cheese enveloped in crispy tortillas.

Ingredients

  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 2 tablespoons olive oil or butter (for cooking)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced)

Instructions

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add chopped spinach and saut until wilted (about 2-3 minutes). Remove from heat.
  2. In a bowl, combine sauted spinach with crumbled feta, sun-dried tomatoes, black olives, and diced chicken if using.
  3. Heat another tablespoon of olive oil in the skillet. Place one tortilla in the skillet and add filling on half of the tortilla. Fold to create a half-moon shape.
  4. Cook each side for about 3-4 minutes until golden brown and crispy. Slice into wedges and serve.
