  • 1 cups water
  • 1 tbsp rice vinegar
  • tsp salt
  • 1 tbsp sugar
  • 200g sashimi-grade tuna, finely diced
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha (adjust to taste)
  • 1 tsp soy sauce
  • 1 avocado, thinly sliced
  • 1 tbsp vegetable oil (for frying)
  • Soy sauce & wasabi (for serving)
  • Sesame seeds & green onions (optional garnish)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with water in a saucepan: boil, then simmer covered for 15 minutes. Let sit for 10 minutes.
  2. Mix rice vinegar, salt, and sugar; fold into cooked rice.
  3. Press seasoned rice into a lined baking tray and refrigerate for at least 1 hour to set.
  4. Combine diced tuna with mayo, sriracha, and soy sauce; chill.
  5. Cut chilled rice into squares and fry in hot oil until golden on all sides.
  6. Top each square with avocado slice and spicy tuna mixture; serve immediately.
