  • 1 cup red lentils
  • 4 tbsp avocado oil or olive oil
  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 tbsp lemon juice
  • cup fresh cilantro, chopped

Instructions

  1. Rinse the red lentils under cold water until clear. Soak overnight or for at least six hours.
  2. In a large deep skillet over medium-high heat, add oil and saut garlic, ginger, and minced serrano peppers for about three minutes.
  3. Stir in spices (cumin, cayenne pepper, coriander, curry powder, garam masala, turmeric) and cook until fragrant (3060 seconds).
  4. Add soaked lentils, crushed tomatoes, and coconut milk; mix well. Reduce heat to low and simmer partially covered for 20-25 minutes until lentils are tender.
  5. Finish by stirring in lemon juice and chopped cilantro. Adjust seasoning as needed before serving.
