  • 16 Dutch carrots, trimmed
  • 600 g regular carrots, peeled and quartered
  • 400 g canned chickpeas
  • 3 tbsp maple syrup
  • 2 tbsp sriracha
  • 1 cup plain yogurt
  • Olive oil, garlic, lemon juice, spices

Instructions

  1. Preheat oven to 200C (425F).
  2. Toss carrots with maple syrup, sriracha, olive oil, salt, and pepper. Spread on a baking tray.
  3. Drain chickpeas and mix with olive oil and spices; place on a second baking tray.
  4. Roast both trays for about 30 minutes, tossing halfway through until golden.
  5. Combine yogurt with grated garlic, lemon juice, olive oil, and salt; let sit for flavors to meld.
  6. Assemble by layering yogurt sauce on a plate followed by roasted carrots and crispy chickpeas.
