  • 2 medium sweet potatoes
  • 1 pound lean ground beef
  • 1 tablespoons olive oil
  • 1 cup cottage cheese
  • 2 avocados
  • 1 teaspoon salt
  • teaspoon black pepper
  • 1 teaspoon garlic powder
  • teaspoon chili powder
  • teaspoon cumin
  • 1 teaspoons salt

  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • cup hot honey
  • Chili flakes
  • Sliced green onions

Instructions

  1. Preheat your oven to 425F (220C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil and spices in a mixing bowl.
  3. Spread sweet potatoes on a baking sheet and roast for about 25 minutes until tender.
  4. While they roast, heat a skillet over medium-high heat and cook the ground beef with spices until browned.
  5. In serving bowls, layer roasted sweet potatoes and ground beef, then top with cottage cheese and sliced avocado. Drizzle with hot honey and finish with chili flakes.
