  • 2 chicken breasts (cut into bite-sized pieces)
  • Red bell pepper (sliced)
  • Green bell pepper (sliced)
  • 1 medium onion (sliced)
  • 2 garlic cloves (minced)
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili flakes
  • 1 tablespoon soy sauce
  • 1 cup long grain rice (uncooked)
  • 2 medium potatoes (cut into wedges)

Instructions

  1. Preheat the oven to 200°C (400°F) and toss potato wedges in oil and salt. Bake for 30-35 minutes until golden brown.
  2. Rinse the rice under cold water and cook according to package instructions.
  3. In a frying pan over medium-high heat, heat vegetable oil and sauté garlic and onions for about 2 minutes.
  4. Add chicken pieces; cook until browned.
  5. Stir in bell peppers and cook for an additional 4-5 minutes.
  6. Season with soy sauce, chili flakes, and honey; cook until the sauce thickens slightly.
  7. Serve hot alongside rice and potato wedges.
