  • 1/4 tsp chili flakes
  • 810 grape tomatoes (halved)
  • 2 tbsp tomato paste
  • 1/4 cup heavy cream
  • 1 tbsp olive oil
  • Fresh basil (for garnish)
  • 1 fresh burrata cheese

Instructions

  1. Boil water in a pot and cook rigatoni according to package instructions until al dente.
  2. Reserve about 1/4 cup of pasta water before draining the pasta.
  3. In a skillet over medium heat, warm olive oil and sauté the chopped shallot for about 2 minutes.
  4. Add chili flakes and tomato paste; sauté for another minute.
  5. Mix in halved grape tomatoes and cook until they soften (about 3-4 minutes).
  6. Pour in heavy cream, stir well, and simmer for 1-2 minutes.
  7. Season with salt, black pepper, and fresh basil; adjust sweetness if needed.
  8. Toss cooked rigatoni into the skillet with the sauce, adding reserved pasta water to reach desired consistency.
  9. Simmer for an additional minute before serving topped with fresh burrata.
