  • 1 green bell pepper
  • 1 red bell pepper
  • 1 medium onion
  • 2 garlic cloves
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce (optional)
  • 1 tsp black pepper
  • 1/2 tsp sugar
  • 1 tbsp vegetable oil
  • 1 cup cooked white rice
  • 1 medium potato
  • oil for frying
  • chili flakes (optional)

Instructions

  1. Cook rice according to package instructions; keep warm.
  2. Heat oil in a pan over medium heat. Fry potato sticks until golden brown (5-7 mins). Drain and season with salt.
  3. In a large pan or wok, heat vegetable oil over medium-high heat. Sauté chicken strips until golden brown (5-7 mins); set aside.
  4. In the same pan, stir-fry minced garlic and onion until fragrant (2-3 mins). Add sliced peppers and cook until tender (2-3 mins).
  5. Return chicken to the pan; add soy sauce, oyster sauce, sugar, and black pepper. Stir well and cook until heated through (2-3 mins).
  6. Serve over warm rice with crispy fried potatoes on the side.
