  • 2 ripe tomatoes
  • 5 cloves garlic
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons extra virgin olive oil
  • Manchego cheese
  • Sea salt & black pepper
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 410F (210C).
  2. Slice the eggplant into inch rounds and sprinkle with sea salt; let sit in a colander for 30 minutes.
  3. Meanwhile, make the garlic paste by crushing garlic cloves with salt, then mixing in parsley and olive oil.
  4. Rinse and dry the eggplant slices, then arrange them on a baking tray lined with parchment paper.
  5. Spread the garlic paste over each slice, top with tomato slices, and grate manchego cheese on top.
  6. Bake for about 15 minutes until golden and tender.
  7. Garnish with freshly chopped chives before serving.
