  • 8 ounces whole-wheat spaghetti
  • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • Low-sodium vegetable or chicken broth

Instructions

  1. In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Add the spinach during the last minute of cooking. Drain and set aside.
  2. In a large skillet, heat a tablespoon of reserved oil from the sun-dried tomatoes over medium heat. Sauté the chopped red onion until softened, about 3-4 minutes.
