  • 1 tablespoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarse black pepper
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 3 1/2 pounds bone-in chicken parts
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup (1 stick) melted butter
  • 1 serrano chile, minced
  • 2 tablespoons minced white onion
  • 1 tablespoon fresh lime juice
  • pinch coarse black pepper

Instructions

  1. Mix chili powder, cinnamon, brown sugar, cocoa powder, salt, black pepper, olive oil, and balsamic vinegar in a bowl to create the spice mix.
  2. Rub the spice mix evenly over the chicken.
  3. Grill the chicken over medium heat for about 30 minutes or until fully cooked (165F internal temperature).
  4. For the lime butter sauce, combine melted butter, cilantro, minced serrano chile, minced onion, lime juice, and black pepper in a bowl.
  5. Drizzle the lime butter over the chicken just before serving.
