  • 1 large egg, room temperature
  • 370 grams bread flour
  • 120 grams heavy cream, warm
  • 57 grams unsalted butter, softened
  • 150 grams dark brown sugar
  • 12 grams ground cinnamon
  • 28 grams unsalted butter, room temperature
  • 55 grams cream cheese, room temperature
  • 15 grams heavy cream
  • 90 grams powdered sugar

Instructions

  1. In a stand mixer, combine active sourdough starter, warm milk, and dark brown sugar. Mix on low until combined.
  2. Add melted butter, salt, and egg; mix again until combined.
  3. Switch to the dough hook and gradually incorporate flour on medium speed until well mixed. Knead for 5 minutes.
  4. Let the dough rise covered in a warm place until doubled (6–7 hours).
  5. Roll out the dough into a rectangle, spread with softened butter, sprinkle with cinnamon-sugar mixture, roll tightly, and cut into pieces.
  6. Place in a greased dish to rise again (3–4 hours).
  7. Preheat oven to 350°F; pour heavy cream over rolls before baking for added moisture. Bake for 30–35 minutes until golden brown.
  8. Prepare cream cheese frosting while cooling: mix softened butter and cream cheese, then add powdered sugar and heavy cream.
  9. Frost warm rolls and enjoy!
