  • 200 g whole milk
  • 100 g active sourdough starter
  • 70 g cane sugar
  • 1 large egg
  • 430 g bread flour
  • 5 g sea salt
  • 8 tbsp unsalted butter (113 g) for dough
  • 5 tbsp unsalted butter (for filling)
  • cup cane sugar (for filling)
  • 2 tbsp cocoa powder (for filling)
  • 1 cup semi-sweet chocolate chips
  • cup whole milk (for topping)
  • cup cocoa powder (for topping)
  • 1 cup powdered sugar (for topping)
  • 1 tsp vanilla (for topping)

Instructions

  1. In a mixing bowl, whisk together whole milk and sourdough starter until blended. Add cane sugar and egg, mixing well.
  2. Gradually add bread flour and sea salt; stir until a rough dough forms. Knead on a floured surface for about 10 minutes until smooth.
  3. Place in a greased bowl, cover, and let rise for 4-6 hours until doubled.
  4. Prepare filling by mixing softened butter with cane sugar and cocoa powder, then fold in chocolate chips.
  5. Roll out the risen dough into a rectangular shape about inch thick and spread the filling evenly over it.
  6. Roll tightly into a log and cut into approximately 12 pieces. Place on parchment-lined baking sheet.
  7. Let rolls rise again for about 30-45 minutes while preheating the oven to 350F (175C). Bake for 25-30 minutes until golden brown.
  8. While baking, prepare the topping by whisking together milk, cocoa powder, powdered sugar, and vanilla until smooth.
