  • 8 tbsp butter (room temperature)
  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper. Set aside.
  2. In a stand mixer, beat butter until smooth. Add brown sugar, molasses, and pumpkin puree; mix for 2 minutes.
  3. Add egg and mix until combined.
  4. Gradually incorporate dry ingredients until just mixed.
  5. Chill dough for at least 30 minutes.
  6. Preheat oven to 350F and line baking sheets with parchment paper.
