  • 3 ripe bananas (mashed)
  • 3/4 cup sugar
  • 1/2 cup oil (canola or vegetable)
  • 3 tablespoons sour cream (or plain Greek yogurt)
  • 2 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar (for cinnamon-sugar swirl)
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease mini loaf pans or one large loaf pan.
  2. In a small bowl, mix together sugar and cinnamon for the swirl.
  3. In a large bowl, combine sugar, oil, sour cream, eggs, baking soda, salt, and mashed bananas until just mixed.
  4. Gradually add flour to the wet mixture; stir until combined.
  5. Layer batter in pans: sprinkle some cinnamon sugar at the bottom, add half the batter, more cinnamon sugar, remaining batter, and top with the rest of the cinnamon sugar.
  6. Bake mini loaves for about 30 minutes or a large loaf for about 60 minutes until a toothpick comes out clean.
  7. Cool in the pan for about 10 minutes before slicing.
