S’mores Cake is a delightful dessert that transforms the classic campfire treat into a decadent and memorable cake. With rich layers of chocolate, fluffy marshmallow cream, and a buttery graham cracker crust, this recipe captures the essence of s’mores in every bite.   • 250 grams digestive biscuits or graham crackers
  • 90 grams unsalted butter (melted)
  • 300 grams granulated sugar
  • 240 ml buttermilk
  • 2 eggs
  • 120 grams cocoa powder
  • 200 grams marshmallow creme
  • 100 grams dark chocolate (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
  2. Combine crushed biscuits with melted butter and press into the bottom of each pan.
  3. In a bowl, whisk eggs and sugar until fluffy. Add buttermilk, oil, cocoa powder, and hot coffee; mix until smooth.
  4. In another bowl, sift together flour, baking soda, baking powder, and salt. Gradually combine with wet ingredients.
  5. Pour batter over the biscuit base in pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. For marshmallow cream, melt heavy cream, dark chocolate, and butter together; fold in marshmallow creme once cooled.
  7. Assemble the cake by spreading marshmallow cream between layers and frosting the top before adding ganache.
