  • 1 can (20 ounces) pineapple chunks, drained (juice reserved)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (for thickening)
  • Chopped green onions (for garnish)

Instructions

  1. In a mixing bowl, combine reserved pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
  2. Place pork chunks into the slow cooker and pour the marinade over them.
  3. Cook on low for 6-8 hours or high for 3-4 hours until the pork is tender.
  4. Add the drained pineapple chunks during the last hour of cooking.
  5. For a thicker sauce, combine cornstarch and water to make a slurry. After removing the pork and pineapple from the slow cooker, pour remaining liquid into a saucepan and bring to a boil while stirring in the slurry until thickened.
  6. Return pork and pineapple to the slow cooker and pour thickened sauce over everything before serving.
  7. Garnish with chopped green onions.
