  • 2 tablespoons olive oil
  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 1 & 1/2 teaspoons salt
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon black pepper
  • 1 small sweet onion, sliced thin
  • 6 cloves garlic, peeled and smashed
  • 1 dried bay leaf
  • 3 pound boneless pork shoulder roast

Instructions

  1. In a medium bowl, whisk together olive oil, orange juice, lime juice, salt, cumin, oregano, crushed red pepper flakes, and black pepper.
  2. Make slits in the pork shoulder roast with a paring knife and rub the marinade all over the meat.
  3. Place the seasoned pork in a greased slow cooker along with sliced onion, smashed garlic cloves, and bay leaf.
  4. Pour any leftover marinade over the pork. If time allows, refrigerate overnight for better flavor absorption.
  5. Cover and cook on low for about eight hours or until the internal temperature reaches 202-205 degrees F.
  6. Transfer the cooked pork to a cutting board and shred it using tongs or forks.
