  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground beef with chopped onions and minced garlic. Drain excess fat.
  2. Transfer the beef mixture to the slow cooker. Add kidney beans, corn, diced tomatoes, chili powder, salt, and pepper; stir until well combined.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, sprinkle shredded cheese on top of the mixture. Cover again until cheese melts.
