Ingredients

Scale
  • 6 chicken thighs (about 1 1/2 pounds)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Kosher salt and black pepper (to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small shallot (minced)
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1 tablespoon fresh lemon juice
  • Fresh thyme and crushed red pepper flakes
  • 1/3 cup heavy cream
  • Freshly chopped parsley (for garnish)

Instructions

  1. Prepare the Chicken: Pat chicken thighs dry with paper towels to ensure crispy skin.
  2. Season the Chicken: In a bowl, mix garlic powder, onion powder, paprika, salt, and pepper. Rub seasoning on both sides of the chicken.
  3. Heat the Skillet: Heat olive oil in a cast iron skillet over medium heat until hot.
  4. Cook the Chicken: Place chicken skin side down in the skillet. Cook for about 7 to 8 minutes until crispy. Flip and cook for an additional 15 to 25 minutes until internal temperature reaches 165°F.
  5. Make the Sauce: Remove chicken; add butter, shallot, and garlic to skillet. Sauté for one minute, then stir in chicken broth, lemon juice, thyme, and red pepper flakes. Add heavy cream and simmer until sauce thickens.
  6. Combine and Serve: Return chicken to the skillet with sauce; garnish with parsley before serving.
