  • 1 lb large shrimp
  • 8 corn or flour tortillas
  • ½ cabbage (shredded or use coleslaw mix)
  • 1 avocado (sliced)
  • ½ cup Greek yogurt or 5 tbsp sour cream + 3 tbsp mayonnaise
  • 2 tablespoons fresh lime juice
  • ½ teaspoon sriracha sauce
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ⅛ teaspoon smoked paprika
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine Greek yogurt, lime juice, sriracha, garlic powder, smoked paprika, and salt. Mix until smooth; add water to thin if desired.
  2. In another bowl, toss shrimp with smoked paprika, garlic powder, oregano, onion powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Cook seasoned shrimp for about 2 minutes per side until pink and cooked through.
  4. Warm tortillas in a skillet or microwave. Layer tortillas with cabbage, shrimp, avocado slices, and drizzle with yogurt-lime sauce. Top with Cotija cheese and cilantro.
  5. Serve immediately with lime wedges.
