  • 1 pound shrimp (peeled and deveined)
  • 1 lemon (quartered)
  • 1 cup celery (finely diced)
  • 1/2 red onion (finely minced)
  • 2 teaspoons lemon juice
  • 2 cloves garlic (minced)
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 1/2 tablespoons fresh dill (chopped)
  • Salt and pepper to taste

Instructions

  1. In a medium pot, boil salted water with quartered lemon. Prepare an ice bath in a large bowl.
  2. Add shrimp to boiling water; cook for 2-3 minutes until pink and opaque. Drain and transfer shrimp to the ice bath.
  3. In a small bowl, mix mayonnaise, lemon juice, Dijon mustard, garlic, dill, salt, and pepper until smooth.
  4. Once shrimp cools, drain and pat dry. In a medium bowl, combine shrimp with celery, red onion, and dressing; toss gently.
  5. Refrigerate for at least an hour before serving. Garnish with additional dill.
