  • 2 ripe avocados, diced
  • 1 cup mango, diced

  • 1 jalapeo, minced (optional)

  • Olive oil for cooking
  • Seasonings: chili powder, salt, and pepper

  1. In a mixing bowl, prepare the mango salsa by combining diced mango, red onion, jalapeo (if using), cilantro, and lime juice. Mix gently and set aside.
  2. Heat olive oil in a skillet over medium heat. Add shrimp seasoned with chili powder, salt, and pepper. Cook for about 34 minutes until pink and opaque.
  3. To assemble the bowls, layer diced avocado at the bottom of serving bowls. Top with cooked shrimp and spoon the mango salsa generously over each serving.
