  • 1 1/2 lbs fresh broccoli (cut into florets)
  • 11 oz chicken sausage (sliced)
  • 16 oz frozen cheese tortellini
  • 8 oz grated parmesan cheese
  • 6 tablespoons olive oil
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • Optional: red chili flakes

Instructions

  1. Preheat the oven to 400F.
  2. Toss broccoli florets with minced garlic and 2 tablespoons olive oil on a sheet pan; season with salt and pepper.
  3. Roast the broccoli for 10 minutes until bright green.
  4. Slice chicken sausage while the broccoli roasts.
  5. Increase oven temperature to 450F.
  6. In a mixing bowl, combine the roasted broccoli, sliced sausage, frozen tortellini, remaining olive oil, and half of the parmesan cheese. Toss well.
  7. Coat the sheet pan with olive oil and spread the mixture evenly across it.
  8. Bake for 12-15 minutes until the cheese melts slightly.
  9. Sprinkle remaining parmesan on top before serving.
