  • 1 1/4 lb sea scallops (side muscle removed)
  • 1 1/2 tablespoons olive oil or canola oil
  • 3 tablespoons butter
  • 12 cloves garlic (minced)
  • 2 tablespoons fresh lemon juice
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Pat the scallops dry with paper towels and lightly season with salt.
  2. Heat olive oil and 1 tablespoon of butter in a cast iron skillet over medium-high heat until hot.
  3. Sear the scallops for 1 1/2 – 2 minutes on each side until golden brown; avoid overcrowding.
