  • 2 cups dry penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • red onion, thinly sliced
  • cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large pot of salted boiling water, cook the pasta for 8-10 minutes until al dente. Drain and rinse under cold water to cool.
  2. Season the ribeye steak with salt and pepper. Grill over medium-high heat for about 4-5 minutes per side for medium-rare. Let it rest before slicing against the grain.
  3. While the steak rests, chop the cherry tomatoes, cucumber, and red onion.
  4. In a bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. In a large bowl, combine the cooked pasta, sliced steak, chopped veggies, and dressing. Toss gently to coat.
